Almond Milk Poached Chicken Salad

1 litre Original Almond Breeze
1 garlic clove, peeled and halved
2 sprigs fresh thyme
5 x 250g chicken breast fillets
2 x cos lettuce hearts, shredded
2 red apples, thinly sliced
1 cup walnuts, chopped
2 celery stalks, chopped
2 tbsp lemon juice
2 tbsp whole egg mayonnaise


Place the almond milk, garlic and thyme into a deep-sided frying pan over high heat and bring to the boil. Add the chicken, reduce heat and allow to cook, covered for 12-15 minutes until cooked through. Remove chicken and allow to cool
Combine the cos lettuce, red apples, walnuts and celery in a large bowl and toss
In a small bowl, mix the lemon juice and whole egg mayonnaise to make a dressing
Once cooled, use two forks to shred chicken. Add shredded chicken to salad bowl, top with dressing and toss once more
