BERRY CUSTARD PANCAKES

INGREDIENTS

 

• 2 cups self-raising flour
• 1/2 teaspoon bicarbonate of soda
• 1/4 cup caster sugar
• 2 eggs
• 1 1/3 cups custard
• 1 cup Almond Breeze Unsweetened
• 1 cup berries

To serve
• 1/2 cup custard
• 1 cup strawberries

METHOD

 

1. In a bowl sift flour and bicarbonate of soda. Stir in sugar
2. In a separate bowl whisk eggs, custard and Almond Breeze. Once smooth, fold in flour mixture and berries
3. Heat a non-stick frying pan to medium heat and spray with cooking oil
4. Using a ladle, spoon mixture onto pan and cook each side for 3 – 4 minutes
6. Repeat steps 5 and 6 until all mixture has been used
7. To serve, pour custard on pancakes and top with strawberries
