LET’S GET EGGCITED OMELETTE

INGREDIENTS

 

• 2 eggs
• 1 tablespoon Unsweetened Almond Breeze
• 2 teaspoons coconut oil
• 25g mushrooms, sliced
• 8 cherry tomatoes, halved
• One handful of spinach
• 1/4 small onion

METHOD

 

1. Whisk eggs and Almond Breeze together
2. Heat 1tbsp coconut oil in a non-stick frying pan over medium heat. Add mushrooms, tomatoes, spinach and onion. Cook for 1 minute, Remove from pan and set aside
3. Heat remaining coconut oil over medium to high heat. Add eggs
4. Cook for 1 – 2 minutes. Add in vegetables and cook for a further 1 minute
5. Serve immediately
