MOCHA BROWNIES

INGREDIENTS

 

Brownie
• 150g butter, chopped
• 1 1/4 cups granulated sugar
• 3/4 cup cocoa powder
• 1 tsp vanilla extract
• 2 large eggs
• 1/2 cup plain flour

Topping
• 1 tsp instant coffee granules
• 1 tsp cocoa powder
• 2 tbs Almond Breeze Chocolate
• 1/2 tsp vanilla extract
• 125g butter softened for topping
• 2 cups icing sugar
• 16 strawberries, hulled and trimmed
• Piping bag with small nozzle
• 1/2 cup (125mL) thickened cream, whipped

METHOD

1. In a medium saucepan melt butter and stir in sugar till dissolved.
2. Transfer to a bowl and add cocoa, vanilla, eggs and sifted flour. Stir to combine.
3. Pour mixture into a lined baking tray and bake at 180 for 30 minutes.
4. To make the icing combine coffee, cocoa, Almond Breeze, vanilla, butter and icing sugar in electric mixer. 
5. Once the brownies are cooled, spread topping evenly over the brownies and use whipped cream and strawberries to decorate!
