Almond Milk Poached Chicken Salad

INGREDIENTS

  • 1 litre Original Almond Breeze
  • 1 garlic clove, peeled and halved
  • 2 sprigs fresh thyme
  • 5 x 250g chicken breast fillets
  • 2 x cos lettuce hearts, shredded
  • 2 red apples, thinly sliced
  • 1 cup walnuts, chopped
  • 2 celery stalks, chopped
  • 2 tbsp lemon juice
  • 2 tbsp whole egg mayonnaise

METHOD

  1. Place the almond milk, garlic and thyme into a deep-sided frying pan over high heat and bring to the boil. Add the chicken, reduce heat and allow to cook, covered for 12-15 minutes until cooked through. Remove chicken and allow to cool
  2. Combine the cos lettuce, red apples, walnuts and celery in a large bowl and toss
  3. In a small bowl, mix the lemon juice and whole egg mayonnaise to make a dressing
  4. Once cooled, use two forks to shred chicken. Add shredded chicken to salad bowl, top with dressing and toss once more
