Breezey Anzac Biscuits

Serves Makes 12 biscuits

INGREDIENTS

  • 1 cup rolled oats
  • 1 cup plain flour
  • 2/3 cup brown sugar
  • 2/3 cup desiccated coconut
  • 125g butter, chopped
  • 1/2 cup Unsweetened Almond Breeze
  • 2 tablespoons honey
  • 1/2 teaspoon bicarbonate soda

METHOD

  1. Preheat oven to 160 degrees Celsius and line baking trays with greaseproof paper
  2. Combine oats, flour, sugar and coconut in a bowl
  3. Mix the butter, Almond Breeze and honey in a saucepan over medium heat and stir until the mixture is melted – then add the bicarbonate soda
  4. Stir the butter mixture into the oat mixture
  5. Roll the dough into balls and place on baking trays, flatten slightly with a fork
  6. Bake for 10-15 minutes or until lightly golden
  7. Allow to cool before serving
