Breezey Biscuits

Serves Makes 20 biscuits

INGREDIENTS

• 100g reduced-fat butter
• 1/2 cup packed soft brown sugar
• 1 teaspoon vanilla essence
• 3/4 cup self-raising flour
• 2/3 cup plain flour
• 1 tablespoon Unsweetened Almond Breeze

METHOD

1. In a large mixing bowl beat together butter, sugar and vanilla essence until well combined
2. Sift the self-raising flour and plain flour into a bowl. Add half the sifted flour to the butter mixture and use a wooden spoon to mix until well combined and add in Almond Breeze
3. Continue to combine the mixture until it forms soft dough. If the mixture is a little dry, add an extra tablespoon of Almond Breeze
4. Roll the dough into balls and place on baking tray, flatten slightly with a fork
5. Place the tray in the fridge for 20 minutes to chill
6. Preheat oven to 160°
7. Remove tray from fridge and bake biscuits for 20 minutes until lightly golden
8. Allow to cool before serving
