Breezey Banana Bread

Prep Time 1 and 1/2 hours

INGREDIENTS

• 2 cups all-purpose flour
• 1 teaspoon of baking soda
• 1 teaspoon of baking powder
• 1 teaspoon of cinnamon
• 1/2 cup coconut oil
• ½ cup honey
• ½ cup of Unsweetened Almond Breeze
• 2 eggs
• 1 teaspoon of vanilla essence
• 4 mashed ripe bananas

METHOD

1. Preheat oven to 165°C
2. In a large bowl whisk together the flour, baking soda, baking powder and cinnamon
3. In a separate mixing bowl, cream together coconut oil, honey, Unsweetened Almond Breeze, eggs and vanilla essence. Stir in the mashed bananas and whisk until smooth
4. Pour the dry ingredient mixture into the banana mixture and combine
5. Pour the mixture into a 9 by 5 inch baking tray. Bake for one hour
6. Remove the bread from the oven and let it cool for 15 minutes
