Chicken with Mushroom Almond Sauce

INGREDIENTS

• 2 tbsps of oil
• 2 cloves of garlic
• 400g white button mushrooms
• 1 small onion chopped
• 3 cups of Original Almond Breeze
• Salt and Pepper
• 5 chicken breasts
• 100g parsley

METHOD

  1. Heat 1 tbsp of oil in a frying pan over medium heat and add garlic, chopped mushrooms and onion until liquid has evaporated
  2. In a separate saucepan heat Almond Breeze over medium heat for 15 minutes
  3. Add the ingredients from the frying pan to the Almond Breeze saucepan and allow to simmer for a further 15 minutes. Remove from heat and blend until smooth
  4. Season chicken with salt and pepper
  5. Heat the remaining oil in a frying pan over high heat and add chicken
  6. After 3 minutes, turn heat down to medium and cook for 7 minutes
  7. Flip chicken and cook for a further 7 minutes
  8. Add sauce to chicken and simmer for 2 minutes
  9. Add parsley and serve
    Serving suggestion: Serve with seasonal vegetables
