Chunky Monkey Muffins

INGREDIENTS

  • 2 1/2 cups plain flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 cup cacao powder
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened apple sauce
  • 1 tbsp coconut oil
  • 1 cup Original Almond Breeze
  • 1 large banana, chopped
  • 100g dark chocolate chips or cacao nibs

METHOD

  1. Preheat oven to 180 degrees Celsius and line a muffin tin with cases
  2. In a large mixing bowl whisk the flour, baking powder, salt, cacao and sugar together until well blended
  3. Add the apple sauce, vanilla, coconut oil and Original Almond Breeze. Stir until just combined
  4. Add the chocolate chips/cacao nibs and banana
  5. Spoon batter into the muffin cases until they’re 3/4 full
  6. Bake for 25 minutes
