Lettuce Avocuddle with a Prawn Salad

INGREDIENTS

• 500g peeled prawns (tails intact)
• 2cm piece fresh ginger, peeled, grated
• 1/4 garlic clove, crushed
• 3 avocados
• 1/3 cup fresh coriander leaves, chopped
• 1/3 cup rocket leaves, chopped
• 1 lime, juiced
• 60ml Original Almond Breeze
• 2 tablespoons water
• 5ml coconut oil
• 1 iceberg lettuce, chopped
• ½ red onion chopped
• 20 cherry tomatoes, chopped

METHOD

1. In a bowl combine prawns, ginger and garlic
2. Chop 1 avocado into small chunks and add to a blender along with coriander, rocket, and lime juice. Process until smooth. Add Almond Breeze and water and blend for a further 2 minutes
3. Over medium heat, heat coconut oil and add prawns. Cook for 4 minutes
4. On a serving plate arrange lettuce, onion, tomato and remaining avocado and top with prawns and sauce
5. Enjoy!
