4 cups Prepared pancake mix
2-1/2 cups Original Almond Breeze®
4 large Eggs
1/4 cup Honey
2 tsp. Vanilla extract
1 tsp. Nutmeg, ground
Mix together all ingredients until blended and just beginning to become smooth. Measure out scant 1/4 cup and pour onto hot griddle. Flip when bubbles cover top. Cook until golden brown.
Sprinkle with Blue Diamond® Almonds. Top with Blue Diamond® Almond Butter. Serve with maple syrup or maple honey cream cheese.
