Poached Salmon and Dill Pesto

INGREDIENTS

  • 4 x salmon fillets
  • 1 litre Original Almond Breeze
  • 1 tbsp lemon juice
  • 3 bay leaves
  • 2 cups snow peas
  • Salt to season
  • 1 1/2 cups fresh dill leaves
  • 1/2 cup parsley
  • 2 tbsp walnuts
  • 2 cloves garlic, smashed
  • 2 tbsp parmesan cheese, shaved
  • 2 tbsp extra virgin olive oil

METHOD

  1. Add almond milk, lemon juice, salt and bay leaves to a heavy based fry pan and bring to the boil. Once boiled, reduce heat to low and add salmon fillets. Cook gently for 5-10 minutes until cooked to your liking
  2. Remove salmon and bring the almond milk back to boil to cook the snow peas for 3-5 minutes. Drain snow peas and set aside with salmon
  3. To make the dill pesto, add the walnuts, garlic, parsley and dill to a blender and whirl until minced. Add the oil and cheese and process until blended
  4. Combine salmon, snow peas and dill pesto on a plate and enjoy
