- 4 servings of pasta
- 1 tbsp olive oil
- 1 onion – diced
- 1 clove of garlic – diced
- 1 small chili
- 1 3/4 cups pumpkin and sweet potato puree
- 1 1/2 cups Unsweetened Almond Breeze
- 2 tbsp nutritional yeast
- 2 tbsp chopped fresh sage, plus more for garnish
- Salt and pepper
Pasta – Fill 2/3 of a large pot with water and bring to boil. Add a pinch of salt and the pasta to boiling water and stir regularly. Cook for around 8-9 minutes depending on pasta.
Sauce – Heat olive oil over medium-low heat; add the onions and cook for 5 minutes. Add garlic and chili, and heat for another minute. Stir in the pumpkin and sweet potato puree, Unsweetened Almond Breeze, sage, nutritional yeast, and salt and pepper . Heat over low heat for 5 minutes. Serve over prepared pasta and garnish with additional fresh sage.
