Vegetable Curry

Serves 4

INGREDIENTS

  • 1 tsp coconut oil
  • 1/2 onion, diced
  • 2 cups steamed sweet potato, cut into chunks
  • Pinch of salt and pepper
  • 1 cup Unsweetened Almond Breeze
  • 1 cup broccoli, chopped
  • 1 cup zucchini, chopped
  • 4 carrots, chopped
  • 1 tbsp curry powder

METHOD

1. Heat coconut oil in a non-stick frying pan over medium heat
2. Sauté onion for 5 minutes
3. Add onion, sweet potatoes, a pinch of salt and pepper and Almond Breeze to a blender and blend until smooth
4. Half fill a saucepan with water and heat on medium heat. Add chopped broccoli, zucchini and carrots
5. Once vegetables are tender pour blended mixture over vegetables
6. Reduce heat and allow mixture to simmer
7. Stir in curry powder
8. Allow to simmer for 5 – 10 minutes
